Healthy Quinoa Salad

Cranberry Orange & Pomegranate Quinoa Salad

Ingredients:

• 1 cup quinoa
• 2 cups water or vegetable stock
• 1 cup chopped fresh kale leaves
• 2 cups fresh cranberries
• 2 tbsp olive oil
• 1 tsp honey
• 2 tbsp grated orange zest
• 4 oranges
• 1/4 cup pomegranate arils
• 1/4 cup mixed nuts, chopped (optional)
• 1/4 cup fresh mint leaves, chopped

Method:

Salt & pepper to taste Rinse quinoa with water. Bring 2 cups water (or veg stock) to a boil and add rinsed quinoa, return to boil. Cover and reduce heat to low and cook about 18 minutes or until liquid is absorbed. Fluff quinoa with a fork, remove from heat and set aside. Salt & pepper to taste Rinse quinoa with water. In a food processor add cranberries, 2 tbsp olive oil, & honey and pulse until coarsely chopped. In a serving bowl combine warm quinoa and chopped kale; cool to room temperature. When quinoa & kale mixture is cooled stir in orange zest; add peeled and chopped oranges. Stir in cranberry mixture and mixed nuts, pomegranate arils, and fresh mint. Season with salt & pepper to taste. Cover and refrigerate until ready to serve.

Natural Skin Care

Girls, Since I know some of you have some issues with skin care products, I thought I'd share this line of products I recently found. They are from KIT Naturals ( http://www.kitnaturals.com ). I have the Coconut Dream Cream, the Orange Silk hydrating cream, and the orange lip balm. My skin and lips feel like silk after I've used them. The coconut one is firm like coconut oil at room temperature, but softens as you warm a spot with your finger. I also think they are a great price considering the ingredients.

Snow in Moorcroft

We got lots of snow on Thursday/Friday.  We had several 3 foot + snow drifts all over our yard.  The boys had lots of fun making snow tunnels and snow forts for a snow ball fight.  Here are some pictures they might take a few seconds to load; clicking and dragging is my favorite.

We went to Devil's Tower last week with the Gondas.  Here are some pictures from our trip.

There was lots of discussion on who got to sit by Lorenzo... Charlize won.

Snow Day!

Yesterday was October 4th.  We woke up to this winter wonderland and cancelled school.  It was a fun day with sledding and hot chocolate.  The poor trees around town suffered a lot of damage though with this heavy wet snow.

Stunt Man Ronan

Ronan, while wearing his 'stuntman' shirt, found a fun game to play.  Jumping from his bed to Zo's bed; over and over.  But that got too slow so he moved his big ladybug (hard plastic) toy between the beds to jump over.  That was too tame too.  So he tried to add in a spin with his jump.  You can see how that ended.  Bat at least his ladybug broke his fall, right?

Baby

We had Kurt's cousin come visit for a few days and got see her cute newborn. Echo was in love. She walks around saying 'baby' all day and loves to hold her. I asked her if mom should have a baby and she said yes ;)

But they were scared by a mountain lion.

They then ran into a skunk

So they jumped into a truck to escape

and went for a ride to a Ferris wheel
